Vinification
in vertical stainless steel fermentation tanks, with 8 days of fermentation at a controlled temperature of 28 °C; the two grape varieties are vinified separately, the racking off is performed with shifting in stainless steel tanks where the malolactic fermentation takes place
Ageing
maceration on the skin for 12 days in stainless steel vats. The malolactic fermentation is also done into stainless steel tanks. for 12 months in 20 hectolitre oak barrels followed by 6 months in bottle.
Organoleptic Characteristics
a bright ruby red color with garnet hue after aging. The nose has a vinous scent with delicate notes of red fruits, cherry "under spirit", sweet spice and tobacco. The taste is rich and harmonious, with a good balanced acidity and a long finish.
